Trailkocken Billy White på Rosendals trädgård har skapat dessa rawballs som serveras på energistationerna på Eco Trail idag. Här delar han med sig av receptet så att vi alla kan mumsa i oss god energi.
Vi önskar alla löpare lycka till, inklusive Billy som tar sig an den längsta utmaningen på 80 km.
Makes 12 balls
125 g pitted dates
440 g skin-on almonds
1 tbsp dried rosehip powder
zest and juice of 1 lemon
120 ml water
Combine the dates, almonds, dried rosehip powder, lemon zest and juice in a food processor, and process until well blended, scraping down the side of the bowl from time to time. With the motor still running, slowly pour in the water through the feed tube until you have a smooth, thick, very sticky dough.
Roll into balls and refrigerate overnight, or for at least 4–5 hours, until firm. These will keep well for up to a week, stored in an airtight container in the refrigerator.
